We offer three types of grape juice-- Frankovká modrá of red varieties, Rizling rýnsky a Chardonnay of white varieties. In our operations you can either have a cup of this juice or buy the whole bottle. At the request, you can get a bottle of siphon and make your own grape juice and soda water mix. If you buy the whole bottle, you have soda for free. In addition, we have prepared for you 100% apple juice.

 

CULINARIUM

We prepared a real dainty for you. In cooperation with the press agency SITA, we prepared for the www.webnoviny.sk a great project - Culinarium.

 

 

On April 8th was officially launched a Culinarium broadcast, in which will gradually present themselves the chefs of Erdödy Palace and the Elesko Restaurant & Wine Bar in Modra. Nine minutes long broadcast captures the process of the dish preparation, monologue and an advice of the chef. The video is accompanied by text and the recipe. We cook for you in the premises of Erdödy Palace as well as in the Elesko Restaurant & Wine Bar in Modra.

 

The video-recipes will be published twice a month and you can look forward for delicious meals. In the end of each video, the sommelier will recommend a wine which goes the best with the prepared dish.

Cold Cuisine

 

Aioli


Is French (but also Italian or Spanish)garlic mayonnaise, originally from Provence. It´s made of boiled potatoes, olive oil, lemon juice and of course a great deal of garlic. It is usually served to baked fish or used as a dressing for salads. In the village it´s also used as spreads on homemade bread.

 

Caesar salad


This famous salad is not from Italy, but it is from Mexico. For the first time has prepared this salad Italian chef Caesar Cardini in his restaurant in Tijuana. Presently, has this recipe become popular especially in California.

It´s made from Roman lettuce, to which is added finely chopped garlic, parmesan, hard boiled eggs, olive oil, worcester sauce, lemon juice and roasted flinders of white bread.

 

Créme fraiche


It is dense, slightly acidulated cream. The origin is in France in Normandy and Brittany. At the present time it´s worldwide. Crème fraiche is very similar to sour cream, but a higher concentration of fat (35%) and smaller viscosity brings great advantages in the kitchen.

 

Guacamole


Spanish expression used mainly in Mexico for spicy avocado sauce. Into the sauce are dipping corn pancake or chips.

 

Houmus


The paste from mixed garbanzo seeds. Traditional Jewish and Arab food served as a spread with chipped aubergine or with potato pancake.

 

Nicoise Salad


French salad, which is very popular around Nice. It is made from boiled potatoes, eggs, bean-pods, tomatoes, sardeles, tuna and olives. Before serving, it´s buried  with vinaigrette dressing from oil, wine vinegar, French mustard, salt and garlic. It is served cold with baguette.

 

Prosciutto


Italian expression for ham. The most famous types of Italian ham is uncooked and unsmoked (Prosciutto crudo - raw ham). Largely are air-seasoned, for example Parma-ham.

 

Rouille


Special French garlic mayonnaise, strong spicy. The literal translation is "rusted". It also contains olive oil, chilli, saffron and ground pepper. It is served with soft tack as an appetizer and with bouillabaisse, potato and fish meal. Rouille comes from Provence and here is the best prepared. Rouille must be absolutely fresh.

 

Terina


French expression for rillets. The title has origin in the appelation bowl - „terinka", in which rillets prepares. It base can be any meat, including fish.

Our En Primeur wines:

Sauvignon ELESKO

 

In ELESKO winery you can find five types of clones of Sauvignon variety. Selected clones come from Austria, Italy and France. Our main technologist is Nigel Davies, who also works as a technologist with the New Zealand viticulture Sileni and he is indeed a professional in the Sauvignon variety. His experiences from wineries such as Babich and Villa Maria guarantee the quality and uniqueness of this wine in Slovakia. The result is an exceptional wine -Sauvignon, which has greatly refreshing character with a hint of fresh herbal taste or Sauvignon, which has a stronger character with a nice peach aroma, which is characteristic for the European continent.

 

 

Viognier ELESKO


We will continue with our exceptional wines offer. As the only company in Slovakia, we are proud of planting the Viognier variety. It has its origins in France in the Rhone River valley region. Today, however, its cultivation in southern France retreats and moves into the more northern growing areas, where due to climatic conditions we can find higher acidity in the wines. This is the reason why we see the potential of this variety also in Slovakia. Aroma of wine is very similar to the right variety Sauvignon, but only if it is OBTAINED by reductive method. But we let the wine mature in large oak casks with a capacity of 5000 liters, by oxidative method. As a result we get very nice and rich wine with a pleasant aroma after exotic fruits and honey with lovely spicy flavor.

 

Dunaj ELESKO


This Slovak "new red clone" is on its rise in vineyards right now. Its character is very nice and sleek with a discreet aroma of forest fruits, however, what makes the wine exceptional is its tint after coffee and chocolate. In early Dunaj, when matured in large oak barrels, we can feel milk chocolate taste that passes into cocoa. If we let it age in oak barrels, we can feel elegant trail of dark chocolate. This purely Slovak variety was created by crossing three varieties - Mouscat Bouchet, St. Laurent and Blue Portugal. With our planting of about 10 hectares we belong to the largest producers in Slovakia.

BRATISLAVA FOOD FEST 2010

Gurmán club Company Ltd. prepares in June, the 2nd year of gastronomy event, Bratislava Food Fest 2010.

After the success of the first year of Bratislava Food Fest (BFF), which was presented for the first time to the inhabitants of Bratislava on Tyršovo river bank, its second year is being prepared. The organizers of the fest, who are active on the field of Slovak gastronomy for several years, decided for the date: 11th - 13th June 2010. Last year, this unique event was attended by more than 8,000 people.

The second year of BFF will bring some novelties. One of them is the change of venue of this event. This year, the Food Fest will be held in Medická záhrada, in the city center, which is known for its pleasant environment and easy access.

 

The organizers of the Bratislava Food Fest are Gurman club Ltd., headed by Mr. Radoslav Nackin, the publisher of the famous guidebook Gurmán in Slovakia, Black Tea Ltd. agency, - full-service advertising agency and a warrantor of the event is the Erdödy Palace - a culinary center in the centre of Bratislava.

 

Participation on the second year of BFF yet confirmed 25 restaurants. This year will present themselves the following restaurants- Grand Hotel Kempinski  - Štrbské Pleso, Hotel Crowne Plaza - Restaurant Fusion, Flowers Restaurant, Camouflage Restaurant, Elesko Restaurant & Wine Bar - Modra, El Gaucho Argentinean Steakhouse, Parcafé Restaurant,...

Modern worldwide and Slovak gastronomy will be presented by our promising young chefs.

 

The following novelties on the second year of Bratislava Food Fest are waiting for visitors: market place, where smaller producers of honey, mead and food will present their products. In Tent of regional flavours the members of Slovak Union of Cooks and Confectioners will present the regional specialties and recipes from the whole Slovakia. Wine tent will present Slovak vintners from small so called "garage" vintners to the largest producers.
